Candy Cane Caprese

A simple gluten-free classic Italian appetizer with a holiday theme. 

5 Ingredients - 10 Minutes to Plate

4-5 Roma tomatoes

16 ounces bite size mozzarella balls

Fresh basil 

Balsamic vinegar

Crackers 

This appetizer comes together so quickly, and you can make it as large or as small as your needs. I serve on my wood cutting board, any serving dish that is flat works well.

 

PREPARATION

  1. Cut the tomatoes in thick slices
  2. Flatten the mozzarella balls with a smooth spatula
  3. Arrange the tomatoes and mozzarella slices on platter in an alternating pattern, forming a large candy cane.
  4. Arrange fresh basil on the sides of candy cane
  5. Add balsamic dressing or balsamic glaze on the side

I love the scalloped variety pack of crackers from Trader Joe’s. Sliced crusty loaf of bread would be another option.

TOO MUCH BASIL? PRESERVE FRESH HERBS

Have too much fresh basil? Use an ice cube tray, fill with olive oil and basil leaves, freeze overnight into cubes. I call these ‘basil bombs’. This technique works on any fresh herb. You can also chomp the herbs in a food processor and freeze the bits in olive oil. If you have a picky eater, using the whole leaf is easier to pick out of the cooked dish.
